Hummus Production Optimised: Ultra-smooth texture with the Fristam Colloid Mixer
A leading hummus manufacturer has successfully developed a new, ultra-smooth hummus texture using advanced inline mixing technology - without altering its core recipe. The breakthrough highlights how modern processing solutions can deliver product differentiation in one of the world’s most competitive food categories. Hummus production demands strict control over texture, particle size and consistency, particularly for large-scale suppliers serving retail and foodservice markets. The producer’s goal was clear: create a lighter, creamier and more homogeneous product while maintaining full recipe flexibility and high-volume repeatability. Working with Fristam and its regional partner, the manufacturer implemented the Fristam Colloid Mixer (FCM) alongside an existing shear blending system. Installed downstream, the high-shear colloid mixer enabled precise particle size reduction beyond the limits of conventional inline mixing. During trials, cooked chickpeas - both standard and fully formulated recipes—were processed through the system in a single pass. Laboratory analysis confirmed a significant improvement in product structure: average particle size was reduced to 28 µm, larger particles were eliminated, and distribution became uniform with no detectable peaks. The result was a visibly smoother, lighter hummus with a cream-like texture—achieved using the same ingredients. This new texture profile opens opportunities for premium product positioning and differentiation in a crowded market. The system also supports full clean-in-place (CIP) operation, ensuring hygienic processing without disassembly. Following successful trials, the producer installed two units, now running reliably in continuous production. This development demonstrates how advanced colloid mixing can transform texture, enabling food manufacturers to innovate without reformulating—an increasingly important advantage in competitive global markets.

IIoT: New LoRaWAN® NETRIS® radio units from WIKA enable connectivity from the measuring instrument to the cloud
The instruments allow battery-powered wireless transmission via the licence-free LoRaWAN® (“Long Range Wide Area Network”) radio standard. This enables long ranges of up to 10 km and a long battery life of up to 5 years. The radio units can be easily configured via WIKA’s web-based IIoT cloud platform and the LoRaWAN® network, in some cases also via mobile devices using the “myWIKA wireless device” app. The NETRIS® instruments are part of WIKA’s IIoT platform, which is available either as a software-as-a-service or on-premises solution. The cloud platform offers full end-to-end encryption with bi-directional communication for a secure IIoT environment. Standard sensors can be connected to the compact NETRIS®1 and -2 radio units to transmit measured data wirelessly to the cloud for big-data analysis. In addition to the licence-free LoRaWAN® and mioty® radio standards, the NETRIS®1 instrument uses Bluetooth® for configuration and short-range data transmission. WIKA has developed the NETRIS®2 and -3 Ex radio units for centralised, web-based remote monitoring of measured data in hazardous areas. NETRIS®2 receives the data via two intrinsically safe, analogue 4 ... 20 mA input signals, while NETRIS®3 already receives the data digitally from a WIKA measuring instrument via an intrinsically safe interface. The fully encapsulated instruments with IP55 or IP65 ingress protection continuously transmit the information to the cloud via configurable data packets using LoRaWAN®.

Introducing ReactALL’s in-situ pH probe
Controlling pH is a critical factor in process chemistry because it directly influences the success of reactions, the quality of intermediates, and the stability of final drug products. Reaction rates often depend on pH, since protonation states determine whether a transformation proceeds quickly or slowly, and this in turn affects overall yield. Beyond kinetics, pH also governs selectivity: certain side reactions can be suppressed by carefully choosing acidic or basic conditions, ensuring that the desired product pathway dominates. Stability is another key concern, as many intermediates and active pharmaceutical ingredients degrade rapidly under extreme pH, leading to unwanted by-products or loss of potency. Monitoring and controlling pH is essential during reaction screening, as it significantly impacts experimental outcomes. The new ReactALL pH Probe enables real-time, in-situ pH measurement throughout an experiment, ensuring optimal control and reproducibility. The new ReactALL pH probe features a buffered gel reference at the sensor tip and measures pH by drawing up the sampling shaft, wetting the sensor for a rapid response within seconds. It includes an automatic wash cycle to maintain cleanliness and accuracy between measurements. Using pulsed measurement technology, it is possible to take a measurement every 20 seconds. The probe is made from PEEK, a high chemical resistance plastic replacing the traditional thin fragile glass of common pH probe, making it more robust and much less likely to break, despite being only 3 mm in diameter. Additionally, because of its thin diameter, it is directly integrated into the SmartCap system, allowing for in-situ measurements. The probe supports multi-point custom calibration with user-defined buffers.
